Monday evening and what to prepare for dinner? – something quick, easy and tasty but dictated by the supermarket shelves...
No doubt that I've said it many times before but a simple to throw in the oven, roast chicken or roast pork are week-night staples in our home. Variety comes in the shape of seasonal vegetables and salads but of course an aromatic marinade or rub works wonders too:
Aromatic Fennel Rub
- 1 tbsp sweet paprika
- 1 tbsp dried oregano
- 1 tbs fennel seeds, dry roast and ground
- pinch sea salt and black pepper
- olive oil – enough to bind to a paste consistency
Mix all the ingredients together then smear over either chicken or pork. Oven roast in a preheated oven until the meat juices run clear; allow to rest before serving.
